Meat Love

I am a meat girl. Steak- the rarer the better. Pork, chop me up. Rack 'em, rib 'em, skew 'em. Give it to me grilled, marinated, fancy or in newspaper with beer, wine or milk. Delicious, scrumptious, grass fed, happy, healthily animal meat in my face please.

Today we went to the butcher to feed this iron deprived carnivore and met the owner whom is also the nicest and most proper lady to stand behind a meat counter. We ordered our steak and she introduced us to some house recipes that all sounded too delicious for one round. For example, fresh mozzarella cheese wrapped with dried smoked ham and then wrapped with thinly sliced steak with a homemade marinade ideal for grilling....ummmmmm, yes please!!

But not this time. Surely next.

We had a great chat with her and she gave us some insight on the butchering market in the area and on their local family product/business. Her and her husband own the shop and her two brothers are the farmers. They slaughter everything here and therefore offer the finest, freshest meat! They use everything and only slaughter what they need which averages between one to two cows a month and three pigs!!! No wasted meat and much more love and life for animals...just as it should be!

Then she turned on the deli slicer and began handing us little pieces of meat heaven. First she started with the ham which was perfectly cured and melted right in your mouth. We bought some. Then she handed us smoked ham that was paper thin and still smells on my fingers. Ladies, rub some of this on your body before going out and men will be drawn to you like hungry dogs to a bone. Guaranteed. Then our dear little delacasenista handed us something I have NEVER EXPERIENCED. It was a variety of meat colors in a jelly looking substance. As she was trying to find the words in English I popped it in my mouth and started violently chewing as she said joints and tongue in jelly fat. Hahahha. Mmmmmmm. Apparently it's a timeless favorite amid the elderly generations of Switzerland. I'm too young to appreciate it because my palate is still working and I have all of my teeth. Thank goodness!

So now off to get some work done to to build up an appetite before throwing some local goodness on the ole grille! But attention locals, next time you drive by the statue, stop inside... :)
